    A colloid mill for emulsion preparation is preferred over simple stirring because stirring alone cannot generate the high shear rates needed to break the dispersed phase into sufficiently small droplets. The rotor-stator gap in a colloid mill delivers far greater localized shear, producing finer, more uniform droplet sizes that resist separation, resulting in a noticeably more stable emulsion than stirred alternatives.
