    A traditional applesauce food mill mainly separates skins, seeds and cores through a sieve, giving a rustic texture, while a colloid mill produces a much smoother, more uniform applesauce by shearing the pulp finely and evenly. Many manufacturers combine both, using the food mill first for separation and the colloid mill afterward for the smooth commercial texture consumers expect.
