    Compared with a traditional fruit mill that mainly separates skins and seeds through a sieve, a colloid mill goes further by shearing the pulp itself into a much finer, smoother puree and can also emulsify added ingredients like sugar syrup or stabilizers. Many processing lines actually use both in sequence, a coarse fruit mill first to remove skins and pits, then the colloid mill for final texture refinement.
