A standard mixer often struggles to fully hydrate thickening agents used in gel production, leaving unswollen lumps, whereas a colloid mill applies high shear that breaks these clumps apart and accelerates uniform hydration, resulting in a clearer, smoother gel with consistent viscosity. This is especially valuable when working with polymers or gums that are prone to clumping when added directly to water.
