    Plain dairy cream production doesn’t typically need a colloid mill, but flavored, whipped or stabilized cream products do benefit, since the mill evenly disperses sugar, stabilizers, cocoa or fruit particles throughout the cream without introducing excess air or damaging the fat structure. This results in a smoother mouthfeel and a more stable texture during both storage and later whipping.
