Colloid mill homogenization theory explains that reducing droplet size increases the total interfacial surface area and slows droplet creaming or coalescence under gravity, since Stokes’ law shows smaller droplets settle more slowly. By subjecting the mixture to intense shear in the rotor-stator gap, the mill produces smaller, more uniform droplets, directly improving the physical stability and shelf life of the emulsion.
