In salad dressing production, a colloid mill breaks oil droplets down to a very fine, uniform size within the vinegar or water phase, creating a much more stable emulsion that resists separating into distinct oil and liquid layers during storage. This is especially useful for creamy or vinaigrette-style dressings containing mustard, garlic or herbs, since the mill also disperses these solid particles evenly throughout the mixture.
