    A basic tomato mill is mainly designed to separate skins, seeds and stems from the pulp using a sieve, while a colloid mill goes a step further by shearing the strained pulp itself into a much finer, smoother texture and can also help emulsify added ingredients. Many tomato processing lines use a tomato mill for initial separation followed by a colloid mill for final texture refinement.
