The difference between colloid mill and homogenizer largely relates to how force is applied: a colloid mill generates shear through the mechanical gap between a spinning rotor and fixed stator, while a homogenizer, particularly a high-pressure type, forces the product through a narrow orifice under very high pressure, creating intense pressure drop and cavitation. This generally allows homogenizers to achieve finer particle sizes than colloid mills.
