Cocoa powder production mainly relies on pressing cocoa liquor to remove fat before dry milling, but a colloid mill can be used earlier to help refine cocoa mass or later to blend cocoa powder smoothly into liquid products like beverages or sauces without lumps. It is less common for the dry powder step itself but valuable wherever cocoa is incorporated into a liquid or paste base.
