When grinding spices in a colloid mill, keeping the gap setting moderate and using water or oil-jacket cooling around the housing helps limit temperature rise, which preserves volatile aromatic oils that are easily lost to heat during fine milling. Feeding pre-crushed rather than whole spices also reduces residence time in the mill, giving a finer, more uniform powder or paste while protecting flavor and aroma intensity.
