Homogenizer is a device used for creation of a uniform homogeneous physically stable blend. As a rule, the blend is made up of two or more mutually insoluble. Therefore, the homogenization process creates a stable uniform structure in a system of mutually insoluble materials. The size of the obtained particles define the duration of blend homogeneity. The smaller the particles, the longer the structure of the product can be maintained.Homogenization is extensively used as one of the most progressive technological processes to radically improve the quality of the product. It is used in production and improvement of many substances, such as fish and meat pate, milk and dairy products, ice-cream and yoghurt, mayonnaise and ketchup, jam etc.
Food homogenizer principle.
This device reduces the size of the dispersed phase particles to 5 microns. At the same time it thoroughly mixes it with the liquid phase. This leads to several advantages of the product, specifically: slower phase separation or complete elimination of separation, increased viscosity, improved quality of the food.

Inside the homogenizer, the product is mixed between the rotation and stationary calibrated parts with radially skewed teeth.
. The centrifugal forces and the high relative speed of the moving and stationary parts of the colloid mill cause liquids and semi liquids to become homogeneous, uniform and finely dispersed. The homogenizer simultaneously disperses and homogenizes the product. Addition of a heating or cooling jacket allows application or dissipation of heat to or from the work zone. The homogenizer features high stability and allows producing highly stable emulsions as well as colloid suspensions with particles size as low as 5 micron.
Besides, the device features cavitation effect, i.e. explosions of caverns in the product by internal pressure.
Homogeniser can be retrofitted into existing production lines.Quality production requires that components for processing be fed to the homogenizer in a certain constant ratio and rate.
